simple cod ceviche
i crave ceviche pretty often around here. as i talk about frequently – i looove mexican food and i love fish so come on. also this is the easiest recipe to do ever because you basically chop some stuff and set a timer.
oh and squeeze 45 limes.
simple ceviche
adapted from rick baylessyou’ll need
1 pound fresh, skinless fish, cut into 1/2-inch dice
1 1/2 cups fresh lime juice (he says 3 or 4, i say buy a dozen to make sure you have enough juice)
1 medium white onion, chopped into 1/2-inch pieces
2 medium-large tomatoes (about 1 pound), chopped into 1/2-inch pieces
fresh hot green chiles (2 to 3 serranos or 1 to 2 jalapeños), stemmed, seeded and finely chopped
1/3 cup chopped cilantro, plus a few leaves for garnish
1 to 2 tablespoons extra-virgin olive oil (optional)
salt
1/2 teaspoon sugar
1 large or 2 small ripe avocados, peeled, pitted and diced
tortilla chips for servingdirections
in a glass or stainless steel bowl, combine the fish, lime juice and onion. use enough juice to cover the fish and allow it to float freely; too little juice means unevenly “cooked” fish. cover and refrigerate for about 4 hours, until a cube of fish no longer looks raw when broken open. drain in a colander. (you can save a couple tablespoons if you like it a little juicy like i do and pour it back in once the other ingredients are in there)in a large bowl, mix together the tomatoes, green chiles, cilantro and optional olive oil. stir in the fish and season with salt, about 1/2 teaspoon. add the sugar. cover and refrigerate if not serving immediately. just before serving, gently stir in the diced avocado. garnish the ceviche with cilantro leaves before serving.

i know i can’t stop complaining about it being too hot here, but i think it’s finally not too hot! actually it’s been freezing cold in our apartment and we had to turn on our little space heaters. very exciting stuff going on over here. i’m spending the weekend doing some DIYs and i think we’re going to make corn chowder and do karaoke.

hey you guys. i’ve decided i’m going to start designing free wallpapers regularly to share with you and because i’m very fickle. maybe you are too. so if you downloaded the last one – you can change it up now!
and yeah – this column will be named freeloader. because free / load / HAHA. you get the idea.
also — i’m trying something new. if you wouldn’t mind “paying” for the wallpaper with a tweet or status update, then please do that, i’m just trying to spread the word but if you hate it – tell me and i won’t do it again ok? we should all be happy in this scenario.

stealing is dumb
so by some odd chance, i stumbled upon a blog tonight where i found a post that looked super familiar to me. perhaps TOO familiar! i discovered someone had essentially stolen my diy post and gave me no sort of credit. i know this happens everyday on the internet and that most people on the internet just suck, and i don’t know if it’s in poor taste to post about it myself – but i don’t really know what to do in a situation like this.
once i saw a girl on instagram had stolen a photo i’d taken and claimed it as her own. why? how is that fun for her?! but that’s a different story all together.
it’s really really really hard to come up with original crafts and diys and posts by myself. i probably spend 99% of my blogging time just trying to come up with original ideas. and while i scour the internet and other blogs and pinterest for inspiration, i can’t imagine doing someone else’s diy without giving them any credit. at least take your own damn approach or make up your own how-to steps — come ON. or just say i was inspired by so and so.
i guess i won’t show you the two identical posts with identical photos and basically identical text but i really want to. but i’ll take the high road.

diy bloody cups
it’s almost halloween!! if you’re hosting a halloween party – here is a VERY easy diy to get your glasses all festive like.
i’m sorry i have no process photos of this. i had to do it outside and didn’t feel like grabbing my camera. but you don’t need process shots. it’s that easy.
materials
cheap glasses (mine are from the dollar store)
red acrylic paint
a small tub or bucket
an xacto
a strawstep one remove all labels from the glasses. pour the paint into the tub and add about a tablespoon of water. stir with a stick. make sure the paint is not too thick and not too thin.
step two gently dip each glass in the tub and try to get the paint on the sides more than the bottom. turn it over to dry it on a piece of cardboard or paper towel, while gently blowing with a straw in order to get more drips. blow from the center outwards.
step three let dry for a day outside, and once dry, you can go and fix up any drips that are too long or too ugly with an xacto, by gently shaping and carving circles and scraping off the excess.
ps. apparently i like blood dripping diys for halloween – last year i made bloody pumpkins here.
